New Zealand (especially the South Island) is easy to get around if you have a drivers license - a lot of people I know rent a GPS device and drive themselves around the South Island, passing through key cities such as Christchurch, Queenstown (plenty to do here) and Dunedin. All up the South Island could take you a week or a week and a half
You can also spend 2/3 days in Auckland just relaxing so 2 weeks all up is plenty of time =)
Downsides:
- High NZD vs. HKD at the moment
- Security/ personal safety is a concern in some areas
PM me if you need any info - I spent enough time living in that country
Australia (Sydney, Melbourne, Brisbane) is nice too but falls somewhere between HK and NZ in terms of busyness, architecture, size etc.
