Usually you have to check how many bonds are formed around that atom before you can guess its hybridization. In the case of SF6, since six bonds are formed around S, and S is the third row element, the possible hybridization is s+3*p + 2*d = sp3d2. Another sign that suggests the sp3d2 hybridization on S is the geometry of SF6 which is close to octahedral (no exactly octahedral in reality though). This agrees with the predicted structure of molecule where the central atom is in sp3d2 hybridization.

one electron from s promoted to vacant d orbital, one p as well, hybridization to form 6 sp3d2 orbitals, with a figure of octahedral-like shape.
